A beautifully sweet, crunchy, chewy, twangy salad.

Balsamic Vinaigrette Dressing:

1/4 cup balsamic vinegar
1/4 cup mandarin orange juice from the can
2 tablespoons honey
2 teaspoons dijon mustard
1 teaspoons pepper
pinch of salt
1/4 cup olive oil

  • Combine ingredients (minus the olive oil).
  • Slowly drizzle in olive oil, whisking to incorporate.
  • Add more salt and pepper to taste.
  • Serve over mixed greens.
  • Sprinkle salad with mandarin oranges, cranberries, feta and walnuts.
