Dense, cakey cookies with a hint of honey- these peanut butter blossoms will satisfy the sweetest of sweet teeth!
1 1/2 cups flour
1/3 cup old fashioned oats
1 tsp baking soda
1/2 tsp salt
1 cup peanut butter
1 cup brown sugar
1/2 cup butter, softened
1/4 cup honey
1 egg
1 tsp vanilla
1 cup chocolate chips
- Stir together dry ingredients.
- In another bowl beat sugar and butter until light and creamy. Add honey, peanut butter, egg and vanilla and beat to combine.
- Pour dry ingredients into the wet mixture and mix ’till combined.
- Stir in chocolate chips.
- Refrigerate dough for 30 minutes.
- Preheat oven to 350° F. Grease cookie sheets with spray.
- Roll dough into ping pong ball size morsels and drop onto sheets. If desired, flatten balls slightly with the bottom of a drinking glass.
- Bake for 12 minutes, or until just slightly cracked on top. Remove from sheets and let cool on racks.
i had the honor of trying the first batch at the Flying One Kitchens in Bermuda (lovely,,try to get there) and they were so good I left spyware on their unattended laptop just to get the recipe first.
