Fragrant and naturally sweetened, this healthier bread is a favorite to make on a Sunday morning.
Wet ingredients:
4 Bermuda-sized eggs, whisked
1/3 cup maple syrup
1 ripe banana, mashed
juice of half a lemon
zest of a lemon
1/4 cup coconut oil
Dry ingredients:
1 1/2 cup flour (almond or white)
1/2 cup coconut flour
2 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
1/2 teaspoon salt
2-4 tablespoons coconut sugar (or brown sugar), depending on how sweet you like things
1 teaspoon vanilla
Add-ins:
1 apple, grated
3 carrots grated (~1 cup)
1/2 cup raisins, soaked in hot water, then drained
Optional: handful of walnuts or pecans
Toppings, if you like things a little sweeter:
Drizzle of honey or maple syrup
Handful of granola
- Preheat oven to 350°F. Line a loaf pan with parchment paper.
- Whisk together wet ingredients.
- Whisk dry ingredients and stir into wet ingredients until just combined.
- Fold in add-ins.
- Blog batter into pan and smooth top. Drizzle and sprinkle on toppings, if desired.
- Bake for 45-55 minutes, rotating halfway through baking. Check for doneness using a toothpick. Let cool in pan for 5 minutes, then turn out onto a cooling rack or plate.
