Mango Raisin Granola

A crunchy, chewy, stick-in-your-teeth granola that can be crumbled over yogurt or eaten plain with milk.

Mango Raisin Granola

3 cups old-fashioned oats
1 cup walnuts, chopped finely
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon ground ginger
1/3 cup maple syrup
1/4 cup black strap molasses
1 teaspoon vanilla extract
2 tablespoons olive oil
1/2 cup shredded coconut
1/2 cup chopped dried mango
1/2 cup raisins

  • Preheat oven to 350 ºF and cover a 1/2″ deep pan with parchment paper.
  • Combine oats, nuts, salt, spices in a bowl. Pour in syrup, molasses, vanilla and oil and stir to coat.
  • Pour into the pan and level with a spatula. Bake for 20-25 minutes until the mixture starts to dry out.
  • Remove from oven and stir in coconut.
  • Return to the oven to bake for another 10 minutes. Be sure to keep an eye on the coconut- it burns quickly!
  • Take the granola out and stir in your dried fruit of choice.
  • Let cool and dry out completely before eating. Store in an airtight container in the fridge.
