Fred, the Sourdough Starter

 

I’d like to introduce you to Fred. He’s my new-born sourdough starter that has taken up residence on the sunny corner of my kitchen counter. While he may not look like much, I have a feeling he’s bound for a great many delicious loaves, biscuits and pancakes.

Fred came into this world on February 2nd, 2013. He’s made out of a 1:1 mixture of warm water and flour (white whole wheat and all-purpose). After mixing the water and flour together with my hands I waited 24 hours before checking for signs of life. There weren’t any. Not too worried (after all, these things take time),  I wrapped Fred in a dish towel and left him in the sun for another 12 hours.

And then there was action! Fred was suddenly a bubbling hive of activity. His top surface was pockmarked and uneven and frothy. Excited, I dumped in another 1/2 cup of flour and 1/2 cup of warm water, gave him a stir and left him to fester in his corner.

Fred is now 4 days old and continues to grow quite happily.
